Creamy mushroom for a low calorie diet. Photos by SDeluz
Mushrooms are a low-calorie food usually eaten raw or cooked to provide garnish to a meal. Raw dietary mushrooms are a good source of B vitamins, such as riboflavin, niacin and pantothenic acid, and the essential minerals, selenium, copper and potassium. Fat, carbohydrate andcalorie content are low, with absence of vitamin C and sodium.
I love using mushrooms in my recipes. Its easy to cook and low in calorie. Here is a recipe you can use both with rice or eaten with noodles.
Ingredients:
half kilo fresh mushroom
250 gms. bacon tidbits
1 big onion (chopped small)
1 can of cream
salt and pepper to taste
1 tbsp flour
chopped parsley
optional: grated cheese
Procedure:
1. Clean and cut the mushroom into stripes lengthwise.
2. Heat up a wok and fry* the bacon bits. Put in a bowl for later use.
3. Using the same wok, saute onion until transparent. Add the mushroom. Cover for 2 minutes.
4. In a separate bowl, put a little bit o cream to dissolve the flour. Mix until free from lump and set aside.
5. Add cream, bacon and flour dissolved in cream into the wok. Stir until sauce thickens.
6. Put in the parsley and season with salt and pepper. Serve with rice or as sauce for pasta.
Tip: You can add in grated cheese on top upon serving.
* Don't use oil in frying the bacon.
